Strawberry swirl Rare Cheesecake: Welcome Month of Love

 Sometime I just want to bake or make something ^^, without any reasons, no request or even thinking about it before.

 It happens in less than a minute, I think I want and I will make it, pick up my recipe notebook, write down the idea and recipe then go into the kitchen. It's not a good habit, but it helps giving me fresh idea, recipe and make each day interesting. 
So, when someone sent me a request I can say that I want to try it but the matter is "When" haha. For this cake, I just think about the look of it, the red color swirl made from strawberry on a white cheesecake, beautiful, right? I can't stop myself from making it.
Rare cheesecake is easy to make, and this recipe is good esp. for any people who don't want to eat raw egg, there is no egg in the ingredient list. Rare cheesecake uses gelatin for setting the cake, you can make it without using the oven. 
You may ask why I add the gelatin in the strawberry puree, because I want the swirl to have the same texture and firmness as the cheeescake (it won't separate or sink).  



Strawberry swirl Rare Cheesecake
Makes 18cm cake


Base
90g ............................... Digestive biscuits, crushed
40g ............................... Melted butter
CheeseCake Batter
200g ............................. Cream cheese
200g ............................. Plain yogurt
100g .............................. Whipping cream
75g ................................. Granulated sugar
1tbsp .............................. Lemon juice
7g ................................... Gelatin sheets (or powder)
70ml .............................. Water
Strawberry swirl
20g ................................ Cheesecake batter 
10g ................................. Granulated sugar
35g ................................. Strawberry puree
0.4g ................................ Gelatin sheets (about 2.5x7 cm of gelatin sheets, if using gelatin powder use rounded 1/8tsp with 1tsp of water)
......................................... Red food coloring, optional


 Mix biscuit crumbs with melted butter, then press into a 18cm base removable cake pan.
Refrigerate until ready to use.
 Put the water in microwavable bowl, put the gelatin into a water, let the gelatin soften.
Put the cream cheese into a bowl beat with sugar until smooth (if the cream cheese is cold, you can place the cream cheese bowl over a bowl of hot water, stir until soften).
Pour the yogurt into the cream cheese bowl, whisk to combine.
Pour the whipping cream and lemon juice into the bowl, whisk to combine.
Heat the gelatin bowl in the microwave heat for 30 seconds or until hot, then stir until gelatin completely melt.
Pour the gelatin into the cream cheese bowl, whisk to combine.
Bloom the gelatin in cold water.
Mix strawberry puree with sugar and warm it in the microwave for 20 seconds or until hot, then put the soften gelatin into the puree, stir until melt.
Put 20g of Cheesecake batter into the strawberry puree stir to combine, add red food coloring if using.
Pour the Cheesecake batter into the prepared cake pan, spoon the Strawberry swirl batter over the cheesecake batter, then use bamboo stick to crate pattern.
Refrigerate for 4 hours or until firm.

  2. I just made a blueberry cheesecake the other day similar to this one :) but I didn't put yoghurt into the mix so might try that next time. Also thanks for sharing how to make the pretty love heart pattern ^__^
