Peanut butter chocolate cupcakes

 I came up with this idea while I was almost sleeping, ^^. Chocolate and peanut butter are best friends, they always create delicious taste when they are together.
Anyway I don't want to make something light, hehe. The simple one is using chocolate cake with peanut butter frosting, but for me, it must be packed with a lot of peanut butter taste too. The chocolate cake is important, first it has to be delicious, ^^ and packed with chocolate taste, I add brown sugar into the cake to make it moist, and the cake is very soft (anyway, it will be firmer after refrigerating it).
 I cut the center of the cake out to create a little hole, and add peanut butter milk chocolate ganache into it. So when eating the cake, the taste of the peanut butter is not only on the top but inside the cake too.
The last thing is chopped salted peanut, I think these little pieces of the peanut makes the cupcake delicious (so don't skip them please!!!), because they add more peanut taste to the cake and saltiness from them make the cake perfect.
I really love the taste of this cake, and if you love peanut butter, I think that you will love it too ^^.



Peanut butter chocolate cupcakes
Makes 6


Chocolate cupcake
50g ................................ Unsalted butter
25g ................................ Brown sugar
50g ................................ Granulated sugar
........................................ Pinch of salt
1 ..................................... Egg
65ml .............................. Whole milk
85g ................................. All purpose flour
15g ................................. Cocoa powder
1tsp ................................ Baking powder

Peanut butter milk chocolate ganache
25g ................................. Whipping cream
25g ................................. Milk chocolate
50g ................................. Smooth Peanut butter


Peanut butter frosting
65g .................................. Smooth Peanut butter, soft
50g .................................. Unsalted butter, soft
65g .................................. Cream cheese, soft
1/2tsp ............................. Vanilla extract
170g ................................ Icing sugar
1tsp-1tbsp ...................... Milk
65g ................................... Salted peanuts, chopped, for decorating

Preheat the oven to 180°C. 
Line cupcake tins with paper cups.
Sift the flour with the baking powder and cocoa powder.


Beat the butter,2 kinds of  sugar, and salt  together until light in color, beat in the egg.

Pour half of the flour mixture into the bowl, fold to combine.
Pour the milk into the bowl, fold to combine, the add the rest of the flour and fold to combine.


Scoop the batter into the prepared cup and bake for 20-25 minutes, or until the top of the cake spring back when touch lightly. Let the cake cool completely on the wire racks.



For the peanut butter milk chocolate ganache:
Put the milk chocolate into a bowl.
Warm the whipping cream in the microwave until almost boil, pour the whipping cream into the chocolate bowl and stir until melt (if the chocolate doesn't melt completely, place the bowl over a hot water bowl). Warm the peanut butter by putting it in a bowl and place the bowl over a hot water bowl, stir until very soft. Mix it with the milk chocolate ganache, stir to combine.
For the peanut butter frosting:
Beat all the ingredients together until combine, add enough milk to make the frosting soft.
Note: if the frosting is too soft, refrigerate until firm enough to pipe.  Assemble:
Remove the center of the cake by using the small cookie cutter. Put the peanut butter milk chocolate ganache into the cake.
Pipe the peanut butter frosting on the top of the cake and sprinkle with chopped salted peanut.

  2. Love the crunch of the peanuts on top. It adds a different dimension to the creaminess of the cake and frosting. Lovely photos :)

  3. Wow! I can feel my jeans getting tight just looking at these delicious looking cupcakes! sinful! A great idea to add the peanuts for extra crunch!
