Happy Cooking with LG SolarDOM: Coconut Milk Sticky Rice with Mangoes "Khao Neeo Mamuang"


 
 After having my LG SolarDOM, I still playing with it, hehe. Microwave cooking is so much fun for me.



Because cooking with the microwave use less time than usual  something that I think that it's hard to make or use a lot of time, seen to be different.
 LG SolarDOM has many functions, anyway, this time I'm still using the microwave funtion (well, start trying another function ^^, it's fun, hehe, and I will show you later). I never thought that making Coconut Milk Sticky Rice will be very easy when using the microwave. If you use the steamer you will need a lot more time (anyway, you need to soak the rice, but with my hot water soaking, the soaking time is only 3 hours). By using the microwave, you cook it in the microwave for only 10 minutes!!!!, AMAZING! 
The other benefits are you can cook a small portion without any problem, and nothing much to be washed ( I think it's very important, ^^, it's mean stress free cooking).
The watt of the microwave is important too, luckily my SolarDOM is very user friendly, you don't have to doutb, or try to read the insturction to know the watt of the microwave power. After selecting the microwave function, you can choose the watt by yourself. Cooking rice need 600watt, if you use more watt the rice will be hard and undercooked (the power is too much, the water dry before the rice cook).
I really love the result, with only half hour of working time (the soaking time is not counted), I get soft and sweet Coconut Milk Sticky Rice to eat with mangoes, which they are in the season right now. And if you making it this way I think you won't turn back, steaming rice for an hour, for me not anymore, haha.

 Coconut Milk Sticky Rice with Mangoes
Serve 2

1 cup (180 g) ................. Sticky rice 
(using 200ml cup)
1/4cup ........................... Coconut milk (A)
1/4cup ........................... Water
50g ................................. Sugar
1tsp ................................ Salt
30ml. ............................. Coconut milk (B)

Coconut milk glaze
30ml ............................. Coconut milk
1/4tsp ........................... Salt
1/4tsp ........................... Cornstarch 

For serving
........................................ Ripe mangoes
........................................ Fried mung bean


 Soaked the sticky rice with hot water for 3 hours, before cooking.
When ready to cook drain the water from the rice, put the rice into the microwaveable bowl and mix the coconut milk (A) and water together. 
Pour the coconut milk mixture into the rice bowl. Cover with the lid or plastic warp.
 Place the bowl in the LG SolarDom microwave.
Select the microwave function, use 600w power. Set the time for 10 minutes.
 After the rice finished cooking, mix the coconut (B) with sugar and salt, warm in the microwave for 20 seconds. And pour the coconut milk mixture into the bowl, stir to mix, and cover for 15 minutes.
After 15 minutes, Coconut Milk Sticky Rice is ready!!!!!
For the coconut milk glaze:
Put all the ingredient into a bowl or microwaveable jug, stir to combine.

 Place the bowl in the LG SolarDom microwave.
Select the microwave function, use 600w power. Set the time for 10 seconds. take the bowl out of the microwave and stir.
Select the microwave function, use 600w power. Set the time for 20 seconds. take the bowl out of the microwave and stir again, now it's ready.

  1. Ooooh microwaves, I am not so sure. Hang on; I don't have one, old school it is then. Trying to get Alphonso Mangos where I live is not so easy. Supermarket Costa Ricans are not for me. Hopefully next weekish should see results. Looking forward to Sticky Rice and Mango perhaps.
    Your recipe sounds amazing as ever.
