Dark chocolate cake by my little nephew: Simple cake for children (to make ^^)

My sister and her son come to stay with me for a while. And I really love this time of the year because both of them really enjoy my cakes,or anything that I make, haha.
But this time the situation is a bit different, my nephew grown up a lot and now he want to make his own cake. So it's my duty to teach him!!
He has a passion for chocolate so I decide that the cake should be chocolate cake. This cake is not hard to make, it's a basic chocolate without the baking powder, the meringue will help the cake to rise when baking.
The top of the cake is a simple ganache, you can boil the whipping cream in the microwave too, by putting the cream in a microwaveable jug (choose the one that big enough), when it becomes boil pour the chocolate into the jug and stir a bit, it's the easiest way to make the ganache too.

 Because I teach him to make it, I forgot to take the step by step photos, but I believe that if he can make it, you will be able to make it too.
Ps. it's very simple and delicious, you can change the flavor of the jam to suit your taste too.


Dark chocolate cake
18cm cake 


 60g ........................... Butter
15g ............................. Icing sugar
60g ............................. Dark chocolate
1/2tsp ........................ Vanilla bean paste
50g ............................. Cake flour
2 .................................. Eggs (separated) 
..................................... A pinch of salt
60g.............................. Granulated sugar
15g .............................. Almond powder
50g .............................. Apricot jam
Ganache
80g .............................. Whipping cream
80g .............................. Dark chocolate



Preheat the oven to 170°C
Line 18cm cake pan with baking paper.
Sift the flour and  Almond powder together.
Melt the dark chocolate by putting it into the bowl and place the bowl over a bowl of hot water (don't let the bottom of the bowl touch the water), stir until melt.


Beat the butter, salt and icing sugar until light and fluffy, put the egg yolks and vanilla  bean paste into the butter and beat to combine. Mix in the melted chocolate, follow by the flour mixture.
Whip the egg white with 60g of granulated sugar, until stiff peaks form.
Fold the meringue into the butter mixture into 3 addition.
Pour the batter into the prepared pan.
Bake for 25-30 minutes or until the top of the cake spring back when touch lightly.
Let the cake cool completely in the pan over the wire rack.
After the cake cool, slice it into 2 layers. Spread the apricot jam over 1 layer of the cake and place the other layer on top.


Make the ganache by boiling the whipping cream and pour it over the bowl of dark chocolate.
Let the ganache cool slightly before pouring it over the cake.


Serve the cake immediately or let the ganache become firm, it will be delicious either way!
